Almond butter fudge is filled with healthy fats, bursting with creamy flavor, and has no added sugar. A small square of fudge is delicious and very filling. The original recipe is very basic and works well with the three staple ingredients: Almond butter, coconut oil, and vanilla extract. I have made this recipe 4-5 times now and I have tried lots of additions. A dash of cinnamon is very nice & a couple of tablespoons of maple syrup were great but it definitely does not need sugar, honey or syrup. For the video demo, I used some chocolate PB2 and that was fantastic!
This is a super-easy no bake recipe that is mixed by hand. Almond butter can be pricey so I like to throw a couple of cups of raw almonds in the food processor for 15-20 minutes to make my own.
Almond Butter Fudge
- 1 cup creamy almond butter
- 1/3 cup coconut oil, melted
- 1/2 tsp vanilla extract
- pinch of salt
- 1/2 cup chocolate PB2 (optional)
Mix ingredients together in a medium bowl until combined well & all large lumps are dissolved. Transfer mixture to an 8X8 glass dish that is lined with parchment paper. Place in freezer for 4+ hours. Remove and cut into pieces. Transfer to an airtight container and store in the freezer.
