Add the oil to the pan along with the squash rosemary chilli and garlic.
While the apples and squash are roasting prepare your topping by frying up the bacon. Roast in the oven just until the butternut squash is fork tender around 25 30 minutes. 1 cup roughly chopped bacon pieces from about 3 strips thick cut bacon.
Season well and gently crush some of the butternut squash with the back of a spoon. While the squash is roasting cook the bacon in a skillet over medium heat until crispy about 8 10 minutes. Roast until the butternut squash is fork tender about 25 30 minutes.
Season with salt and pepper then scatter bacon on top.
