Caramel Apple Cheesecake Cookies

Right before Thanksgiving I did a little research on easy, new cookie recipes.  Caramel Apple Cheesecake Cookies were the chosen flavor combination after reading up on my options. I was really drawn to the fad of using cake mix and pudding in a recipe. There are several variations to the technique; but most add a little oil or butter, eggs, and nuts or chips to a pre-made cake mix with a packet of instant pudding.

These cookies are by no means non-processed; but if you need to whip up a delicious, easy dessert they are super easy to execute! The best looking recipe of the bunch came from the blog Shake Bake and Party.  I have made these cookies twice now and I highly recommend using regular pudding mix and not the sugar-free variety. This time I simply could not find a regular box of cheesecake instant pudding. The batch with the sugar-free pudding tastes great; but the cookies are a lot softer.

The recipe calls for Pillsbury cake mix and I am sure that tastes just fine; but Duncan Hines was all I could find. And it is awesome! It has pieces of apples and a separate packet for the caramel powder. Someday I might just make the mix as a cake…
