Creamy Cauliflower Soup


When I made this Creamy Cauliflower Soup, I started with the intention of making a cheesy cauliflower-bites recipe I found on Pinterest; and somehow I ended up making soup with different ingredients. I love this soup. It is creamy, filling, and tasty. This recipe feeds two hungry adults as a main course or makes four sides.


Creamy Cauliflower Soup


  • 1 head cauliflower, stem removed, florets roughly chopped
  • 1/2 cup sliced mushrooms
  • 1 vegetable bouillon cube
  • 1/2 medium onion, quartered (skin removed)
  • 3 cloves garlic, roughly chopped
  • 2 Tbsp butter
  • 1 1/2 cups water
  • 1 cup whole milk
  • 1/2 pt whipping cream
  • 1 tsp seasoned sea salt
  • 1 tsp salt
  • 2 tsp dried thyme

To make:

  1. Add all ingredients to a medium sized pot on the stove top. Simmer for 45 minutes, covered. (Make sure pot or kettle is large/tall enough that it will contain splatter from blending later!)
  2. Let cool for 30 minutes with the cover on.
  3. Using a hand mixer, blend the soup until smooth. (For a chunky texture just mash it with a potato masher)
