When I was a child, Fruity Pebbles cereal was my favorite! I saw a recipe for Fruity Pebbles Cookies floating around Facebook awhile back. After researching, I can credit the Crazy for Crust blog for the exact recipe and it is a great recipe! Fruity Pebbles remind me of little rainbow colored leaves so this recipe is perfect for fall festivities! The colors are bright, the fruity scent is delightful, and they taste so good with the slight crunch from the cereal.
Fruity Pebbles Cookies have vanilla pudding, white chocolate chips, and the cereal inside gives them a fantastic texture! In college, my sister & mom were awesome and would drop off different batches to my dorm almost weekly. One of my favorites was a lemon, rice krispie variety. Based on my love of the two cookies, I believe you could swap out different chips or pudding to create your ultimate Fruity Pebbles Cookies!
Fruity Pebbles Cookies are easy to make, fill your house with an amazing aroma, and are irresistible! Make sure your butter and eggs are at room temperature and don’t be afraid to use your hands to finish incorporating the cereal at the end. My cookies turned out perfect at 11 minutes: chewy on the inside, slightly crispy on the outside and sprinkled with rainbow crisp and creamy white chocolate chips. This recipe makes around 2 dozen cookies. If you are a lover of cookie dough, you might have less, because this dough is amazing!
