I get so excited when I find a new, healthy, easy recipe! I follow the blog Chocolate-Covered Katie on Facebook and while she mainly shares healthy dessert recipes, the occasional savory gem pops up. When I saw her Flourless Cheese Bread recipe, I knew I was going to make it!
The weather has cooled off into the 60’s for the past couple of days. In our house, that means I am making soup! I soaked some beans last night and slow cooked them on the stove top with some veggies and broth. Right as the soup was about to be done I threw together the bread in no time, let it bake for 21 minutes, let it cool, and had the perfect accent to my homemade black bean soup.
This bread is fantastic! It is filling, holds up to my heavy black bean soup, but is still light and airy. It looks like cornbread but it is less dense & there is no crumbling. It has a wonderful savory flavor from the garbanzo flour & cheese. I followed the recipe, using unsweetened cashew milk, apple cider vinegar, EVOO (instead of water,) pepper jack cheese, and about 1/2 tsp of raw honey instead of stevia/sugar. I highly recommend this recipe–it would go perfect with chili!
