With all of the extra fruit in the house I have been working hard to not let anything go to waste. We were gifted a large batch of fresh-picked strawberries a few weeks ago. I froze them, baked with them, ate them and blended them up in the blender for homemade strawberry lemonade. This got me on a kick with making different smoothies with the fresh and frozen fruit in the house. Peaches, kiwis, mangoes, raspberries, strawberries, cherries and bananas–how can you go wrong with any combination of those fruits with a little liquid? I stumbled across two recipes online that are flavor explosions and are super easy to make with a basic blender. A raspberry cheesecake recipe and a peach mango bliss recipe.
Do not be intimidated by the cottage cheese in the cheesecake recipe! It blends easily and is lighter tasting than you would expect. For anyone trying to create something closer to a milkshake than a fruit drink–this is what you have been searching for! The peach mango smoothie is like a perfect fruit slush. Of course I altered their recipes a little based on what I had in the house (strawberries instead of raspberries and peach-mango juice instead of orange juice) and they turned out wonderfully!
