Late last month my only sibling, my little sister, passed away at home at the age of 34. She lived with cancer for over five years & suffered from cancer in her last couple of months. What started out as a visit, turned into her final battle. Now that I am home full-time I don’t know how to function. So I will clean the house, watch tons of “The Office” on Netflix, take lots of long walks, and I will continue to pray hard when I am lost. While I was at my Mom’s house, generous, wonderful, caring people filled our fridge & cupboards with tons of comfort food. I have not had to think about preparing meals or eating healthy for a long time.
Now that it is up to me to think, plan, and prepare food again (instead of eating ice cream & cookies for breakfast,) the easiest thing I can do when I am overwhelmed is throw a bunch of fresh fruit in a blender with ice & juice and hit “blend.” Luckily, I love summer fruit–it is cheaper, tastier, and good for me.
This morning I threw together an amazing smoothie (it made about 1 1/3 quarts:)
- 1 banana
- 1 dragon fruit
- 1 mango
- 1 cup of pineapple
- 1 pint raspberries
- 1/2 cup of pineapple juice
- 5 ice cubes
The mango & pineapple really stand out & it is a gorgeous orange/ “sunny” color! I hope everyone is enjoying the sun and making time for walks, bonfires, and lots of swimming!
